Apple Tea

A refreshing drink for hot summer days, which used to be drunk in place of strong cider during the noon-day heat, at Harvest time.

Four crisp, tart apples

One quart of boiling water

Sugar to taste

Lemon rind when available, or a clove when it is not

 

Bottles

Wipe the apples with a damp cloth, cut into small pieces without peeling or removing the cores. Put them into a large jug or stone jar with the clove or the rind of half a lemon.

Press the apples well with a wooden spoon, pour the boiling water over, press again, leave to infuse for twenty four hours.

Strain off the liquid, add sugar to taste and, in hot weather a small piece of ice.
