A couple of ideas of things that you could do with Potatoes

Baked Savoury Potatoes.

Mash up finely some well drained and dried boiled potatoes. Season with salt, a few caraway seeds and grated cheese to your taste.

Melt a little lard or dripping in a baking-tin. When it is hot, put in the potato mixture, pressing it down well and seeing that the layer is not too thick.

Then bake until golden-brown and crisp.

If a green salad is available, eat it with this attractive cake.

Cabbage Hot Pot

Boil a cabbage, drain it well and slice it up. At the same time par-boil 1lb of sliced potatoes and fry 2 onions in a little dripping or margarine until they are soft but not browned.

Now grease your hot pot and put into it layers of cabbage onion and potato, seasoning as you go, ending with potato

Put on the lid, and cook in the oven until the potatoes are done, taking off the lid for the last few minutes to brown the top.

It should be moist enough without liquid, but a little stock can be added if it looks too dry.
